Chili Tacos
/There is no better way to celebrate Cinco de Mayo and Taco Tuesday than with tacos!
If you are wanting to add meat, replace half of the beans with ground meat.
Ingredients:
1⁄2 white medium onion, diced
2 cloves of garlic, crushed
1 large carrots, diced
14 oz can crushed tomatoes
2 Tbsp tomato paste
15 oz canned black beans
15 oz canned red kidney beans
2 cups brown or green lentils
2 tsp cumin
2 tsp crushed chili
1 tsp cinnamon
1 tsp cocoa powder
1 tsp brown sugar
1 tsp salt
dash of cayenne pepper
salt & pepper, to taste
Optional Toppings:
Avocado
Cilantro
Sour Cream
Cheese
Instructions:
Add 1-2 Tbsp avocado oil to a large pot over medium heat.
Once warm, add onions, garlic and carrots.
When onions are translucent, add in crushed tomatoes, tomato paste, beans, lentils, spices and brown sugar.
Mix all ingredients together and cook on medium-low heat for ~10-15 minutes until carrots are soft.
Top with avocado, cilantro, sour cream and/or cheese.
Serve in a hard taco shell and enjoy!
