Cheese Biscuits

These cheese biscuits are one of my favourite recipes! I find they pair well with a soup, chili or just on their own. Not to mention – they taste amazing and you would never guess how healthy they are for you! Cheese biscuits or scones from the store are often higher in fat and lower in vitamins, minerals and fibre. Try this quick recipe instead and enjoy a delicious side while giving your body all those amazing nutrients and lasting energy!

Yield: ~ 12-15 biscuits
Prep Time:  ~ 20 minutes

Ingredients:

  • 2 cups whole wheat flour (or 1 cup whole wheat, 1 cup whole grain)
  • 4 tsp baking powder
  • 1 Tbsp sugar
  •  ¼ tsp salt
  • 2 cups cheese (cheddar or marble), grated
  • ¼ cup canola oil
  • ¾ cup milk


Instructions:

  1. Heat oven to 425°F. Line baking tray with parchment paper.
  2. In a large bowl, mix together flour, baking powder, sugar and salt.
  3.  Add cheese to bowl and mix.
  4. In a small bowl, mix together canola oil and milk.
  5. Slowly add wet ingredients to dry ingredients and mix until a dough consistency forms. Add a bit of extra flour if dough is too sticky.
  6. Sprinkle a bit of flour on the counter and knead dough about 8-10 times.
  7. Shape into medium sized balls (about ¼ cup) and place on tray. Leave at least 1" of space between biscuits.
  8. Bake for 10-15 minutes, until nice and golden.


Interesting nutrition fact:
Why are whole grains better than refined grains (i.e. white flour, white bread)?

  • Whole grains have more nutrients and fibre compared to refined grains. In Canada, refined grains are enriched by adding back vitamins and minerals that were lost during processing. You will see this in the ingredient list as enriched flour. 
  • Even though refined grains are enriched, they are still missing out on many of the nutrients and fibre found in whole grains. Look for whole grains in the ingredient section when checking out nutritional labels.
